Fudgy Bourbon Balls

2 1/2 cups chocolate cooie crumbs
1 1/4 cups pecans, wole, halved or pieces (optional)
1/2 cup bourbon
1 cup powered sugaar
3 tbsp unsweetened cocoa powder
1 tbsp honey

Grind cookie crumbs (and pecans) in blender until finely ground.
Stir together in a bowl: bourbon, powered sugar, cocoa and honey.
Add cooie crumbs to mixture and stir with wooden spoon until combined.
Let dough rest overnight, uncovered and at room temperature.

Roll dough into 1 in balls and toss in powdered sugar.
Store in refrigerator in container to serve soft.
Or store uncovered to create a crunchy sugar crust.

Sprinle with more powdered sugar just before serving.

Makes 4 dozen balls
