AUNT JULIA'S CREAM CHEESE ROLL-UPS

This recipe is another one of Aunt Julia's famous specialties. She made them, at all times of the year, but particularly at Christmastime. When they
are made with candied red and green cherries, dates and pineapple, they look like a pile of colorful jewels. There is no sugar in the dough because they
are rolled out on powdered sugar, which sweetens the cookies automatically.

CREAM CHEESE ROLL-UPS

Cream together: 1 cup butter or margarine
1/2 pound cream cheese.
Blend in: 2 cups sifted flour
1/4 teaspoon salt
Chill dough thoroughly, at least 12 hours. Dough keeps for several days with no problems. Sift powdered sugar on work surface and roll dough out 1/8 inch thick. Cut into strips 1?3 inches and roll around pieces of candied fruit and pitted dates. Bake at 375 degrees until barely golden on bottom.

You could use dried apricots, cherries, nuts, etc., as well as dates and candied fruits. Experiment a little. Do they make apple crisp, etc.? I know there are a lot of recipes for vegans where tofu is used in various ways to replace date and egg products -- presumably they already know about those?
