The Tylers' Sweet Hot Pepper Relish

Our friends Lynne and Ron Tyler introduced this recipe to us. This relish is extra special. Just the right mixture of hot and sweet. Tom's brother Eddie makes so much of it that he could mass manufacture it.

2 pounds hot peppers, seeded
2 pounds red and green sweet peppers, seeded
2 pounds onions
2 Tabl. salt
2 1/4 cups cider vinegar
2 1/2 cups sugar

Grind the peppers and onions in a meat grinder.
Add salt to ground vegetables. Cover with boiling water. Soak for ten minutes. Drain and discard the liquid. Add the sugar and vinegar. Bring to a boil and simmer for twenty minutes. Ladle into hot fars, pressing down. Fill to 1/2 in. of top, cover, and process in boiling water bath for fifteen minutes at a full boil.

Makes about 7 pints.
