Apple Barley Puddin

(Serve with whipped cream)

3 cups water
4 tablespoons pearl barley
1 1/2 pounds apple, peeled, cored & sliced
3 tablespoons sugar
1 tablespoon lemon juice
 
Bring water to boil. Stir in barley, add apples and cook until both barley & apples are soft. Process in a food processor or blender. Return to pan with sugar and lemon juice and bring to a boil. Cool, then chill and serve with whipped cream.
