BISCUIT SHORTCAKE

This is the traditional shortcake used in Maine for strawberry shortcake.

425° for 25 minutes

Stir together

2 cups flour
3 teaspoons baking powder
½ tsp salt
2 tablespoons sugar

Cut in

1/4 cup margarine

In a separate bowl combine

1 egg with enough milk to make ½ cup

Stir into dry ingredients to make a soft, rollable dough.

Add a little more milk, as necessary.

Pat or roll out on floured wax paper to c.½-in. thick and cut into biscuits.
