Ted Lancette's Cabbage Salad
1 head of cabbage - shredded
8 green onions - sliced
1/2 cup sunflower seeds
1/2 cup sliced almonds - toasted
1 cup vegetable oil
3 tablespoons of rice vinegar
4 tablespoons of white sugar
1 teaspoon of salt
1/8 teaspoon of ground black pepper
2 Seasoning packets from Ramen Noodles (preferably oriental but any will work)
2 packages of uncooked Ramen Noodles
TO MAKE SALAD
In a large bowl combine cabbage, onions, sunflower seeds and almonds - set to side.
TO MAKE DRESSING
In a blender combine oil, vinegar, sugar, salt, pepper and seasoning packets. Blend & refrigerate.
Toss dressing and cabbage mixture - chill 2 hours. Immediately before serving break up Ramen noodles and mix with the salad.
