Chocolate Date Cake
9x13” pan, 350◦ oven, approx. 40 minutes
1 cup dates, chopped + 1 cup boiling water – Mix & set aside to cool. If the dates are still hot when you mix them into the batter, they will melt the butter.
Grease the pan and set aside.
13/4 cup flour + ¼ cup baking cocoa + 1 teaspoon baking soda: Mix well and set aside
Cream together: ¾ cup margarine + 1 cup sugar.
Add: 2 eggs, one at a time + 2 teaspoons vanilla. Mix well.
Stir in flour mixture, alternating with cooled date mixture.
Stir in:½ cup chocolate chips
Spread in greased pan.
Mix together: ½ cup grated coconut & ½ cup chocolate chips. Sprinkle over cake batter.
Bake at 350 degrees until coconut is toasted & cake tests done in the center. Cool before serving.
