Mushrooms Stroganoff


1 lb, mushrooms

Medium onion, chopped

2 tbsp butter

2 tbsp olive (or vegetable) oil

1 tbsp paprika

4 tbsp flour

salt to taste (about 1 tsp)

2 tbsp sour cream

Wash trim and slice the mushrooms.
Chop a medium onion.
Saute the mushrooms and onion with the butter and oil.
When the mushrooms have given up their juice and the veggies are fairly dry but not burning, stir in the paprika and the flour until the mushrooms and onion are well mixed with flour and paprika.

Gradually stir in water (or vegetable bouillon if you like it) to make a smooth gravy.

Salt to taste and add more paprika if you want.

Just before serving, stir in a big spoonful of sour cream and warm the mixture but don't let it boil before serving. If you want to, you can cook a thinly sliced carrot with the mushrooms or add some other vegetable you like.

Serve over noodles.
