Pickle Relish

10 cups ground zucchini or cucumber
4 cups ground onion

Soak overnight with 5 tblsp of salt.

Drain, rinse, and drain.

Add 2 1/4 cup of white vinegar
4 ½ cups of sugar
1 tablsp of each of the following: nutmeg, dry mustard, tumeric, and cornstarch
2 tsp celery seed
1 tsp mustard seed
½ tsp pepper
2 finely chopped green or red peppers

Bring to a boil and simmer for ½ hours until think.

Put in jars and process.

Makes c.5-6 pints.
