2 Tablespoons butter
4 Tablespoons olive oil
6 tablespoons flour
2/3 cup dry skim milk
Have ready 1 cup cold water and 2 cups boiling water.

In a 1 1/2 quart, microwave safe bowl, melt together butter & oil. Whisk in
the flour. Add cold water and dry milk, whisk to blend, add boiling water.
Microwave on full power, whisking every minute until sauce has thickened and
boiled. Season with salt, pepper and a pinch of nutmeg. If desired, add
2-4 Tablespoons of parmesan cheese.
