Zucchini Bread

3 eggs
1/2 cup vegetable oil
1 1/2 cups sugar
2 cups grated and drained zucchini
2 teaspoons vanilla
2 cups sifted flour (half whole wheat)
1/4 teaspoon baking powder
2 teaspoons baking soda
3 teaspoons cinnamon
1/2 teaspoon salt
1 cup raisins (or currants or chopped prunes)
1/2 cup wheat germ

Beat eggs. Add oil, sugar and vanilla. Mix well.

Add zucchini and mix from now on with wooden spoon.

Sift dry ingredients together and stir in.

Add raisins and wheat germ.

Baked in 2 greased loaf pans at 350 F. for c. one hour.

(Can also be baked in one greased bundt pan.)
